Raspberry Banana Softie

½ Cup per serving

Ingredients:

4    Bananas (peel, vacuum and freeze)

13  Frozen Raspberry

3 Tbsp. Liqueur (Amaretto, crème de menthe etc)

Sprigs of fresh mint

 

Method

  1. Cut bananas into small pieces and feed through Yonanas and into a bowl. Level into the bowl and cover with plastic food wrap (make sure the plastic is touching the pureed bananas) and place in the freezer.
  2. Feed frozen raspberries through Yonanas and into a bowl. Level into the bowl and cover with plastic food wrap (make sure the plastic is touching the pureed berries) and place in the freezer.
  3. When ready to serve place half the banana and half raspberry mixture in a piping bag squeeze gently but firm using a circular motion into an ice cream dish, or parfait glass. Or using a 4 oz ice cream scoop, make sure each scoop contains half banana and half raspberry mixture (for presentation)
  4. Garnish each serving with a sprig of fresh mint and drizzle with 1 teaspoon of your favorite liqueur and serve.

Chef’s note: use any frozen fruit or combination of fruits. Great as a treat or dessert
